It just so happens I used to live in H-town and worked downtown.
Without knowing budget and specific location, I would recommend The Lancaster (a traditional little boutique hotel located in downtown Houston), the Magnolia Hotel (contemporary, clean, a little more trendy than The Lancaster), and of course the Four Seasons is always a winner, assuming budget is not an issue. There's also a Hyatt Regency (a bit larger) and the Crowne Plaza downtown. Just stay away from the Hilton Downtown which is connected to the George R. Brown Convention Center.
